Is it possible to restrict the car to 10mph etc

Pull 2 plug leads off and take them with you. Car will still be able to move but will be rather crippled so no chance of a test drive.

What spark plugs do you use?

1.1 gap should be fine for 0.8 bar the rule of thumb is to run the biggest gap possible without blowing the spark out (misfire) via a trial and error method as each car and its ignition ststem are different.

What spark plugs do you use?

Depends how modded your car is, heat range 7 is fine for me at 222bhp. All the -11 means after the BKR7 bit is that the plugs are gapped to 1.1mm which is fine for stock engine but most people need around 0.8-.09 gaps give or take.
