Why is Brandy Aged?

I'm not into the exact science but as a fully fledged alcomaholic I think aging improves the taste. I know it does not work this way with beer though. After a few months it starts to get a bit thick near the bottom. Drinkable but thick lol..

most things mature with age...apart from me!

something about the chemicals slowly releasing hence the older it is the stronger it is,

same with wine aint it?

Brandy to me gets a bit sweeter with time. Had some 100 year old and was not that good.
Best for me is between 10-30 years.
In afrikaans we say, "dit gis" whatever that is in english hahaha! something like it slowly kicks :D
